What pays more, has flexibility and growth for a 40 year old plus women?

I want to go to college and finally get my degree but I dont want to waste time. Social Work, special ed teacher, spanish teacher, speech language pathologist, or a registered dietician. I need some sound advice it will take at least 4 to 5 years to accomplish one of these goals and im terrified of making the wrong choice. help
